ONION TOMATO CHUTNEY

INGREDIENTS
Onion medium.                      2
Shallots.                                   4-5
Tomato.                                   3
Red dry chillies.                     4-5 according to taste
Curry leaves.                          3 tbsp
Refined oil/coconut oil        2  tbsp.
Salt to taste
METHOD
Heat oil in a thick bottomed kadai/skillet and on medium heat add dry red chillies. Saute for two seconds then add chopped onions, shallots and curry leaves. Fry for 2-3 minutes add the tomatoes and saute till tomatoes become soft. Turn off the heat
Let it cool down. Blend in a blender into a smooth paste. Take it out in a bowl.
Serve with idli/dosa/uttapam.

TOMATO GARLIC CHUTNEY

Tomatoes are sweet,juicy and delicious. They are fat free and low in calories and have vitamin C. I learnt this recipe from my mom.

INGREDIENTS
Tomato 2kg
Garlic 2 pod
Chilli powder 2 tsp(as required)
Sunflower oil / olive oil 2 tbsp
Salt to taste

METHOD
Grind all the tomatoes in a mixer. Take a deep pan or a pressure cooker without lid and put all the tomatoes in a medium heat,stir continuously.

In a kadai/wok add 2 tbsp oil and add all the peeled garlic until it is lightly brown and keep it aside.

When the liquid in the tomatoes are reduced to almost three fourth consistency add the garlic,chilli powder and salt and stir till all the liquid reduces.

After it cools down serve with rice, roti dosa, idli etc.Can also be used as a base for pizza and chappathi / roti rolls.
