POTATO MINT OMELETTE

Eggs are consumed all over the world and is a rich source of protein. Egg whites contains almost no fat and the carbohydrate content is less than 1% , unlike the yolk which is high in fats. Eating potatoes can increase brain function, reduce inflammation and can prevent cardiovascular disease, but if you are over weight or diabetic you have to reduce the intake of potatoes.
INGREDIENT
Egg                                                                2
Potato grated small                                   1/2
Mint finely chopped                                  3 tbsp
Onion finely chopped                               1/2
Green chillies/pepper                               1-2  tsp
Cauliflower florets finely chopped        2 tbsp
Olive oil                                                       2tsp
Salt to taste
METHOD
In a large bowl add the eggs, grated potato, finely chopped onion, finely chopped mint,pepper/green chillies finely chopped, finely chopped cauliflower florets and salt.
With a fork nicely beat and mix all the above ingredients.
Heat olive oil in a flat pan. Add the above egg mixture and make an omelette on low to medium heat. When it is cooked flip and cook the other side too.
Take it out in a serving plate. Serve with bread/rice.
